Spring has sprung and there is no better way to celebrate the longer days and warmer nights than by baking Oatmeal Pretzel Strawberry Chipotle & Fig Jam Bars. These bars are the perfect fix for a sweet tooth, an easy on-the-go breakfast treat, or the perfect addition to your summer picnic spread!
To make this gluten-free, low sugar, and vegan treat that was inspired by our friends over at Trade Street Jam, we used Quinn’s Classic Sea Salt Pretzel Twists in addition to the ingredients listed below:
- 2 cups of gluten-free oats
- 1 cup of almond flour or oat flour
- ½ teaspoon of salt
- ½ teaspoon of baking soda
- 1 teaspoon of cinnamon
- ¾ cup of vegan butter or coconut oil
- 1 jar of Strawberry Chipotle & Fig Jam
- ½ cup of Quinn’s Classic Sea Salt Pretzel Twists broken into small pieces
To make:
- Mix together the dry ingredients & melted vegan butter
- Pack half of this oatmeal mixture into a 9x9 baking pan
- Bake at 350 degrees for 15 minutes or until the crust is golden brown
- Allow your pan to cool completely before spreading the jam and the rest of the oat mixture on top
- Place the baking pan back into the oven and bake for 15 more minutes at 350 degrees
